Food shorts: Stroobant returns, umami contest

‘Chef in Black’ returns for Chefs on Parade
International celebrity chef Emmanuel Stroobant will do a series of cooking demonstrations and workshops during this year’s Chefs on Parade on February 28 to March 3, 2013 at the SMX Convention Center.
Stroobant, more popularly known as Asian Food Channel’s “Chef in Black,” will share his recipes using foie gras and present interesting facts about its history and production.
He will also talk about food and wine pairing, as well as share recipes enhanced with wine.
Realizing that every future chef should have the knowledge in dealing with food allergy, lactose intolerance or cooking for people with diabetes or high cholesterol, Stroobant will also show simple techniques on how to create healthy dishes and present several healthy menu options.
During his stay in Manila, Stroobant will visit charity beneficiary, Tuloy sa Don Bosco Foundation, which prepares street children for reintegration into mainstream society.
Umami Culinary Challenge 2013
An estimated 450 students from 43 universities and colleges in Metro Manila and nearby provinces are expected to showcase their culinary skills and mastery of the umami taste at the Ajinomoto Umami Culinary Challenge (UCC) 2013. The whole day event will be held on February 2 at the SMX Convention Center.
Now on its fourth year, Ajinomoto Philippines Corp. established UCC as the first-of-its-kind, inter-school culinary competition that focuses on umami, which is considered the “fifth basic taste” alongside sweet, sour, bitter and salty.
“We want more aspiring chefs to discover how deep understanding of umami effectively develop their skills to attain culinary excellence,” Chef Russell Bautista, project head of UCC, said in a statement.
Contestants will compete in five categories: umami bento meal, healthy Asian umami dish, Filipino umami Dish, their own umami creation and umami potter.
Serving as competition judges are Seiji Kamura, executive chef of Mana Culinary Fusion; Joey Herrera, ISCAHM chef; Ed Quimson, chef patron of M Catering & Fine Foods; Eugene Raymundo, food stylist and part owner of Five Cows Restaurant and Kitch Café; and Babes Austria, executive chef of Taal Vista Hotel Tagaytay.
Foodies and other guests can attend seminars on food safety and food processing, umami cooking demonstrations and other activities.
Valentine’s Day at Pan Pacific Manila
Pan Pacific Manila has prepared a special seven-course Valentine dinner menu, featuring Pacific Sea Scallops “Rossini” with Sea Urchin Crème Brulee, Seared “Foie Gras” on Mesclun with Roasted Sunflower Seeds and Candied Cherry Tomatoes in Light Raspberry Vinaigrette, Sweet Pea Cappuccino with Smoky Barbecue Froth, Seared Red Snapper Fillet and Braised Belgian Endives in Truffle Essence Beurre Blanc on Crispy Enoki Mushroom with Olive Tapenade Demi-Sauce, Lime and Vodka Sherbet, and Herb-Crusted Veal Tenderloin and Sweetbread Fricassee “Au Jus” with Potato Rosti on Baby Swiss Chard.
A Couple’s Dessert Platter of Mango Tatin with Ube Ice Cream, Chocolate and Asian Pear Terrine, and Pineapple Mousse and Confit “En Flute” caps the romantic meal.
Customers will also be serenaded by live entertainment.
The special dinner is available on February 14 and 15 at P1,900 net per person.
Food treats at Discovery Shores Boracay
The hotel’s Sands Restaurant offers themed dinner buffets except Wednesdays, Thursdays and Sundays, from P1,250++ to P1,450++. Buffet themes include international dinner buffet, Filipino, Italian, grill, Greek, Asian and Hawaiian luau. An acoustic trio serenades guests with live music at the beachfront on special nights.
Platitos offers a “Chews & Brews” promotion, which includes a bucket of four bottles of beer and a pica-pica sampler consisting of Chinese spring rolls, calamari, French fries and kropek from 4-7 p.m. daily.
At the dinner-only venue Indigo Restaurant, enjoy a four-course set dinner from its gourmet set menu (P1,850++) or steak for two (P3,500++).
