MANILA – The ground floor of EDSA Shangri-La hotel is home to a new bistro that promises good food in an elegant yet casual setting.
Despite its high-brow interiors, fancy-looking dishes and prime location, Madison’s Bistro Moderne has a laid-back vibe that people in shorts and flip-flops would be allowed to come in.

Formally launched last week, Madison’s takes the space that used to be occupied by the bookstore Fully Booked and divided it into two areas.
At the rightmost end just beside the hotel entrance is a deli store that sells anything from vegetables in jars to cured meats and foie gras. Beside it is a restaurant that also has a bar and a chef’s table for 12 people.

Guests during the launch party were greeted by wine, champagne, cocktails and bite-size versions of Madison’s dishes such as Tri-color Ravioli (cream cheese, quail egg, truffle oil, bacon bits and Beurre Noisette) and Speck and Goat Cheese Mousse.

All in all, Madison’s menu is refined but approachable. Some noteworthy dishes offered here include the Foie Gras Ballotine (P550), Pistachio-crusted Black Cod Fish (P650), Potato Gnocchi (P480) and Dry Aged Rib Eye (P1,680 for 300 grams).
For dessert, the restaurant has items like Wild Berries Soup with Vanilla Thyme Ice Cream (P250) and a Walnut Parfait (P265).
For those who are only planning to grab some bar chow and drinks after work, Madison’s has the usual calamari rings, croquettes and shoestring fries as well as different types of handmade pizzas and beef sliders.
